Washed process coffees in Sidama (also spelled Sidamo) begins with freshly picked coffee cherry getting hand sorted for uniformity, washed clean and floated for density before depulping. Then, the coffee is washed and the parchment is placed on screen beds for 2-3 weeks. It’s kept at a shallow depth on the tables so it can be easily rotated for even dehydration in the open air; covering at night and during the high heat afternoons. Sidama has a robust union of coffee cooperatives (53 member co-ops!), a thriving set of independent processing stations, and some of the highest elevations and quality soil in Ethiopia. |
