The Guji zone of Ethiopia is heavily forested and at a high altitude compared to many coffee growing countries. Coffees from this area are often jammier and juicier, but often under-represented due to the region’s processing capacity. The Uraga Suke processing station receives cherry daily from farmers, then hand sort for ripeness. Then, cherry is moved directly to the drying beds: a process that ranges from 8-25 days due to the variation of temperature in the forested and high altitude region. The cherries are rotated through the day and covered at night to avoid humidity. Once dried they are stored for stabilization, then hulled and transported for export. |
