La Terraza in Colombia is producing some of the best coffee varieties and using the latest processing methods to create unique and delicious coffees. This coffee was selected specifically by us to highlight how beautiful and special coffee can be when care and intention are priorities in the entire process. The lot we selected is Sidra varietal and is lactic-fermented: accentuating the body of the coffee. The farm is a mix of coffee cultivation, wildlife sanctuary, and nature reserve. Lactic fermentation process: Coffee beans are left to ferment in an anaerobic environment. Thanks to the high amount of sugars contained in the mucilage and the ease of being used by microorganisms, this sensory process manages to highlight the body of the coffee. *Orders of Gold Star coffees will be roasted on Mondays.
